While there are some foods that are off-limits on a low carb diet, there are lots of delicious foods that you can still enjoy. I’ve found some amazing recipe ideas that I’m sharing with you here - I’ve tried them out for you and know you will love them!

Low Carb Crunchwrap Supreme

This lunch recipe is amazing, and will definitely fulfill any taco cravings you might have. This serves 4 and while it’s a little high in calories at 684 calories per crunchwrap, it is low in carbs at just 7 grams per serving. If you’d like to have fewer calories, I would suggest leaving out the nacho cheese. 

What you need: 

  • 1 head of cabbage
  • 4 tbs low carb taco seasoning
  • 1 cup low carb nacho cheese (or substitute any other cheese)
  • 1 cup of sharp cheddar
  • 2 tbs olive oil
  • 1 lb ground beef 
  • ½ cup of sour cream
  • 2 cups of shredded lettuce
  • 1 tomato, diced

Creamy Sun-Dried Tomato Chicken

This. chicken. is. amazing. At just a little over 300 calories per serving, and 5 grams of carbs, you can’t pass this up! It’ll be your go-to low carb chicken meal for years to come.  

What you need: 

  • 4-6 6 oz boneless skinless chicken breasts
  • Salt and pepper
  • 2 tablespoons of olive oil
  • 3-4 cloves garlic chopped
  • 1-2 cups chopped spinach
  • 1 cup of heavy whipping cream
  • 1/4 cup oil-packed sun-dried tomatoes
  • 1/4 cup grated Parmesan cheese

Easy Low Carb Buffalo Chicken Lettuce Wraps

Craving something a little more spicey? These low carb buffalo chicken lettuce wraps are exactly what you need! As a latina, I need my food to be spicy. I feel like something is missing when it’s not, and these wraps were just the right amount of hot. Two lettuce wraps are 250 calories and just 5 grams of carbs!

What you need:

  • 2 1/2 cups of shredded rotisserie chicken (I got the store-bought kind)
  • 1/4 cup shredded cheddar
  • 1/2 cup Frank’s RedHot Sauce
  • 1 cup cherry tomatoes
  • 1/4 cup of sliced red onion
  • 1 avocado
  • 10 romaine leaves
  • Ranch (optional)

If you’re anything like me, it can get so easy to dwell on all the foods you can’t have when you are on a diet - which can make it really challenging to stick to your diet. But that’s what I love about doing a low carb diet - there’s a really great substitute for almost everything so that you can enjoy losing weight while you are on your diet.
